These 2011/12-crop, high-altitude, certified organic, Arabica (Tipica 80%, Caturra 20%) green (unroasted) coffee beans come from Colonia Siete Estrellas, in Chijchipani County, Carrasco La Reserva area, in the Caranavi Province, La Paz Department, Bolivia. They were packed at origin in GrainPro® bags. They were depulped and washed using pure Andes mountain spring water, and sun-dried on wooden table tops and hand selected by “Palliris” (Aymara Indian women food graders). These beans were wet-processed by the individual growers and dry-processed under our own supervision at the ANPROCA Beneficio (dry coffee mill). This is our best “production” Bolivian coffee, it is hand selected and personally identified by Elva Suazo, our Bolivian Coffee Lab chief and head Bolivian cupper. Elva was formerly a Cup of Excellence® National Judge. To preserve its taste and aroma we packed the coffee beans at origin in 132-pound Super Grain Pro® bags and ship them to our temperature-controlled warehouses in the US, where it is kept until its final sale. This coffee is superb and makes a wonderful dark roast. Once you open the Grain Pro® bag, if your purchase 132-lbs or more, you will be taken away by the floral, fruity aroma of these green beans, just as they smelled when they left the Beneficio. We recommend our Invalsa Cumbre (AAA) beans for darker roasts, such as single-origin, unblended espresso because they are larger and denser (grown at higher altitudes) and they can better take (and tolerate) the added heat. Because of its complex flavor and aroma (see cupping notes above) we prefer an unblended (single varietal and origin), dark (#40 Agtron/SCAA) roast for these coffee beans. You may want to know, however, that other roasters use them as a mandatory component of their special “secret” blend.
Invalsa Coffee (co-based in Boston, MA and La Paz, Bolivia) sourced these specialty-grade green coffee beans ourselves, directly from the farmer, cooperative, or estate that produced them.
