These 2011/12-crop, green (unroasted) coffee beans come from Colonia Uchumachi and were processed by the Mayachasinani Cooperative. Colonia Uchumachi is located next (around the mountain) of Colonia San Ignacio. These are 100% Premium, Arabica beans (Tipica 85%, Caturra 15%). These coffee beans are shade-grown in the higher altitudes of the Uchumachi area in the Caranavi Province. We sourced them by cupping every submission from the Colonia and setting aside all the ones that showed a clean cup, but did not score 80 points or higher. They were depulped and washed using pure Andes mountain-spring water, sun-dried on wooden table tops and hand selected by “Palliris” (Aymara Indian women food graders). These is our second major purchase from Colonia Uchumachi and we are very pleased with the results. We have other Uchumachi coffees that are graded Specialty and sold as microlots. These coffee beans are organic-certified. They are professionally-graded and cupped, and will be shipped in a boxed, burlap bag. Once in the US, it is cheaper to ship green coffee (in small quantities) in plastic bags (like many coffee sellers do) but green coffee exposed to changes in temperature and humidity need to “breathe” to avoid mold and fermentation. Hence, we go through the added expense of small burlap bags to further maintain the high quality of our Premium coffee. Besides, everybody loves our food-grade, biodegradable burlap bags. There are too many un-recyclable plastic bags already! We prefer a moderately dark (#45 Agtron/SCCA) roast for these coffee beans. However, other roasters prefer it darker-roasted. Some roasters use them as a single-terroir, others use as a mandatory component for their special blend. You can try all combinations and then decide!
