Vacuum-packed at origin for long-term storage, these Certified Organic, 2011/12-crop green (unroasted) coffee beans come from the farm of Eulogio Luque, a young farmer, who in conjunction with his brother Braulio and sister-in-law Aida Titirico de Luque constitute the Cima del Jaguar (Jaguar’s Peak) mini-estate. Braulio is a well-known and respected Bolivian coffee grower, having finished in the top three places during the last of Bolivia’s Cup of Excellence® competitions. During Invalsa’s first Bolivia origin/sourcing trip in September of 2011, participants accompanied by our CEO Nelson & EVP Jorge visited the Cima del Jaguar estate and were hosted to a camp-light dinner by the extended Luque family (their homes do not yet have electricity), after we visited the farm, ate some ripe, red coffee cherries and took plenty of pictures. At night, some visitors claimed that they heard the roar of a jaguar, justifying the estate’s name. This is our fourth purchase from Cima del Jaguar, part of a multi-year contract to buy their entire production, separated by each individual farmer. We like its refreshing acidity and long aftertaste. Eulogio’s farm is located at over 5,000 feet above sea level. We have visited with the Luque extended family many times through our regular farm visits. These are 100% Arabica (Tipica 85%, Caturra 15%), shade-grown, de-pulped and washed using pure Andes glacier-melt water, sun-dried on wooden table tops and hand selected by “Palliris” (Aymara Indian women food graders). They were processed manually by Eulogio at his farm. Because of its complex flavor and bright acidity (see cupping notes below), we prefer a light medium (#65 Agtron/SCCA) roast for these coffee beans to truly appreciate all their flavor and aroma nuances. Our Head Cupper gave this coffee a score of 87, with notes as follows: Bright acidity, floral caramel, honey, green apple aromas. Intense citrus, fruity chocolate flavor. Long aftertaste, round body, excellent balance.
